Chinese Sweet Syrup Cake

Chinese Sweet Syrup Cake is a cherished treat often enjoyed during festive occasions or as a delightful afternoon indulgence. This home-cooked version captures the essence of Chinese family kitchens, where salt is measured by feel and richness is embraced. It's a cake that invites sharing, reflecting the communal nature of Chinese dining without the need for special ceremonies.

The cake is a masterclass in balance, with a tender, buttery crumb that speaks to the generous use of fat. Each bite is enhanced by a soaking of sweet syrup, creating a luscious texture that melts in the mouth. The experience is one of pure, simple pleasure, a sweet escape into the comforting realms of home-baked goodness.

Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by taking 3 eggs and 100 g of butter out of the refrigerator. Allow them to come to room temperature, which will help the eggs blend smoothly and the butter to cream easily. This step ensures a uniform batter, crucial for the cake's texture.
  2. In a large mixing bowl, cream together the 100 g of softened butter and 150 g of sugar. Use a wooden spoon or an electric mixer on low speed. The mixture should become light and fluffy, indicating that the sugar has dissolved into the butter.
  3. Crack the 3 room-temperature eggs into the butter-sugar mixture, one at a time, mixing well after each addition. This gradual incorporation helps maintain the batter's emulsion, preventing it from curdling.
  4. Sift 200 g of flour into the bowl, folding it gently into the wet ingredients with a spatula. Be careful not to overmix; stop as soon as the flour is just incorporated to keep the cake tender.
  5. Transfer the batter into a greased and lined cake pan, smoothing the top with a spatula. Place the pan in a preheated oven set to 180°C (350°F). Bake until the cake is golden brown and a skewer inserted into the center comes out clean, indicating that the cake is fully cooked.
  6. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. This resting time allows the cake to firm up slightly, making it easier to handle.
  7. Prepare the syrup for soaking by gently heating it in a small saucepan until warm but not boiling. Pour the warm syrup evenly over the cake while it is still slightly warm in the pan, allowing it to soak in and infuse the cake with moisture and sweetness.
  8. Let the cake cool completely in the pan before transferring it to a serving plate. The syrup will have fully absorbed, making the cake moist and flavorful. Serve the cake at room temperature, allowing the flavors to be fully appreciated.
