Gyeran Bbang

Serves 4 to 6 vegetarian

Gyeran Bbang

Gyeran Bbang, a beloved Korean street cart snack, finds its way into homes with a simplicity that retains its original charm. This dish, known for its comforting presence, is a popular choice for breakfast or a warm afternoon treat. The street version, with its salt judged by hand and generous use of fat, is translated here into a home-friendly version that invites the same joy and warmth.

The golden bread cups cradle soft, baked eggs, enriched with a touch of butter that melds into the fluffy texture. A hint of sugar and a pinch of salt bring subtle balance, enhancing the comforting, savory-sweet combination. This is not just a bread with an egg, but a small, handheld delight that evokes the bustling streets of Korea with every bite.

Ingredients

  • 4bread cups
  • 4eggs
  • 1 tbspbutter
  • 1 pinchsugar
  • 1 pinchsalt

Method

  1. Begin by taking 4 eggs and 1 tablespoon of butter out of the refrigerator. Allow them to come to room temperature. This ensures that the eggs will cook evenly and the butter will mix smoothly into the batter, preventing any lumps.
  2. In a small saucepan, melt the 1 tablespoon of butter over low heat. Once melted, remove from heat and let it cool slightly. This melted butter will be used to grease the bread cups and add richness to the batter.
  3. Prepare the bread cups by brushing the insides with the melted butter. This will prevent the batter from sticking and will give the Gyeran Bbang a golden, crispy exterior.
  4. In a mixing bowl, crack the 4 eggs and add a pinch of sugar and a pinch of salt. Whisk the mixture gently until the yolks and whites are fully combined, creating a smooth, slightly frothy mixture. This will form the base of the Gyeran Bbang, providing a savory flavor with a hint of sweetness.
  5. Carefully pour the egg mixture into each buttered bread cup, filling them about three-quarters full. This allows room for the eggs to expand as they cook without overflowing.
  6. Place the filled bread cups on a baking sheet and transfer them to a preheated oven set to 350°F (175°C). Bake until the eggs are set and the tops are slightly puffed and golden, which should take about 15-20 minutes. The texture should be firm to the touch but still soft and custard-like inside.
  7. Remove the Gyeran Bbang from the oven and let them cool slightly before serving. This allows the flavors to meld and makes them easier to handle. Serve warm, as this is when the texture and flavors are at their peak, reminiscent of the street cart experience.
