Ingredients

  • 300 gflour
  • 200 gcheese
  • 100 gbutter
  • 1egg

Method

  1. Begin by taking 100 g of butter and 1 egg out of the refrigerator to bring them to room temperature. This will ensure the butter is soft enough to mix easily and the egg blends smoothly into the dough. Meanwhile, grate 200 g of cheese and set it aside for later use.
  2. In a large mixing bowl, combine 300 g of flour with the softened butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse breadcrumbs. This technique helps create a tender, flaky texture in the pastry.
  3. Add the room temperature egg to the flour and butter mixture. Mix gently with a spatula or your hands until the dough just comes together. Be careful not to overwork the dough, as this can make the pastry tough.
  4. Incorporate the grated cheese into the dough, folding it in gently. Ensure the cheese is evenly distributed throughout the dough, which will provide a consistent flavor in every bite.
  5. Preheat your oven to 180°C (356°F). While the oven heats, roll out the dough on a lightly floured surface to a thickness of about 1 cm. Cut the dough into desired shapes using a pastry cutter or knife.
  6. Place the shaped dough pieces onto a baking sheet lined with parchment paper. Bake in the preheated oven until the pastries are golden brown and the cheese is bubbly, which should take about 15-20 minutes. The pastries should have a crisp exterior and a soft, cheesy interior.
  7. Once baked, remove the pastries from the oven and let them cool slightly on a wire rack. Serve warm, allowing the cheese flavor to be at its most aromatic and the pastry at its most tender.
