Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by setting out 100 g of butter to soften at room temperature. This will make it easier to spread later and ensure even layering in the pie. Also, take out 200 g of cheese to bring it to room temperature, which will help it melt smoothly during baking.
  2. Preheat your oven to 180°C (350°F) to ensure it's ready for baking. While the oven is heating, melt the softened butter in a small saucepan over low heat. Stir occasionally until fully melted, but do not let it brown. This melted butter will be used to brush between the layers of pastry.
  3. Lay out one of the 10 pastry sheets on a clean work surface. Brush it lightly with the melted butter using a pastry brush, ensuring the edges are well-coated to prevent drying out. Sprinkle a thin layer of your chosen herbs over the buttered pastry sheet. This will infuse the pie with aromatic flavors.
  4. Place another pastry sheet on top of the buttered and herbed layer. Repeat the process of brushing with melted butter and sprinkling with herbs until all pastry sheets are used. This layering technique will create a flaky, flavorful crust.
  5. Grate the 200 g of room-temperature cheese evenly over the top layer of pastry. The cheese should cover the entire surface, as it will melt and bind the layers together during baking.
  6. Carefully transfer the layered pastry stack to a baking dish. Place it in the preheated oven and bake until the pastry is golden brown and the cheese is bubbly and slightly crisp, about 25-30 minutes. The pie should have a fragrant, buttery aroma and a lightly crisp top.
  7. Once baked, remove the pie from the oven and let it cool for a few minutes in the dish. This allows the layers to set slightly, making it easier to cut and serve.
  8. Serve the Korean Layered Pie 2 warm, allowing the cheese to remain gooey and the pastry crisp. It's best enjoyed immediately, shared at the table with family or friends.
