Korean Layered Pie

Korean Layered Pie is a cherished home-cooked dish that reflects the comforting simplicity of everyday Korean meals. Traditionally prepared with an intuitive approach, it involves layering pastry sheets and generous amounts of cheese and butter to create a hearty centerpiece for family gatherings. This is not a dish reserved for special occasions, but rather a staple that brings warmth to the table on any given day.

Biting into a slice reveals a rich, buttery texture, with the cheese melting into each layer, while a hint of herbs adds a delicate aromatic touch. The pie is meant to be shared, inviting everyone to partake in its savory satisfaction. Its structure is both flaky and creamy, offering a delightful contrast that is pure comfort.

Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by bringing 100 g of butter to room temperature. This will ensure it is soft enough to spread easily on the pastry sheets. At the same time, grate 200 g of cheese and set aside, allowing it to come to room temperature as well. This helps the cheese melt evenly during baking.
  2. Take 10 pastry sheets and lay them out on a clean surface. Gently brush each sheet with the softened butter, making sure to cover the entire surface. This will create a rich, flaky texture in the final pie. Sprinkle a small amount of herbs over each buttered sheet for added flavor.
  3. Preheat your oven to 180°C (350°F). While the oven heats, layer the pastry sheets in a baking dish, alternating with a generous sprinkle of the grated cheese between each layer. Press down gently after adding each layer to ensure the pie holds together well.
  4. Once all the layers are assembled, pour any remaining butter over the top layer to ensure it browns beautifully. Place the baking dish in the preheated oven. Bake until the top is golden brown and the cheese has melted completely, which should result in a bubbling, aromatic pie.
  5. Remove the Korean Layered Pie from the oven and allow it to cool slightly. This resting period helps the layers set, making it easier to slice and serve. The pie should be warm but not hot when served, allowing the flavors to meld perfectly.
