Ingredients

  • 250 gflour
  • 150 gnuts — chopped
  • 100 gbutter
  • 100 gsugar
  • 1egg

Method

  1. Begin by taking 100 g of butter out of the refrigerator and allowing it to come to room temperature. This will make it easier to cream with the sugar and ensure a smooth dough. Crack the egg into a small bowl and let it sit at room temperature as well, which helps it incorporate better into the mixture.
  2. In a large mixing bowl, combine 250 g of flour and 100 g of sugar. Mix them together with your hands or a whisk until they are evenly distributed. This step ensures that the sugar is well-integrated into the flour, which will help create a uniform dough texture.
  3. Add the softened butter to the flour and sugar mixture. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. This technique is crucial for creating a flaky pastry texture.
  4. Lightly beat the room temperature egg and gradually add it to the flour mixture. Stir with a wooden spoon or your hands until the dough begins to come together. If the dough feels too dry, add a teaspoon of cold water at a time until it forms a cohesive ball.
  5. Place the dough onto a lightly floured surface and gently knead it a few times to ensure it is smooth and pliable. Be careful not to overwork the dough, as this can make the pastry tough. Wrap the dough in plastic wrap and chill it in the refrigerator for about 30 minutes to allow it to firm up.
  6. While the dough chills, prepare the nuts. Coarsely chop 150 g of nuts, such as almonds or pistachios, which are commonly used in Pakistani pastries. Set aside.
  7. Preheat your oven to 180°C (350°F). Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Sprinkle the chopped nuts evenly over the surface of the dough, pressing them gently into the dough to adhere.
  8. Cut the dough into desired shapes, such as squares or rectangles, using a sharp knife or pastry cutter. Place the pieces onto a baking sheet lined with parchment paper, leaving space between each piece to allow for expansion during baking.
  9. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the nuts are toasted. The edges should be slightly crisp, and the center should be set but not hard. Allow the pastries to cool on a wire rack before serving.
