Ingredients

  • 300 gflour

Method

  1. Start by bringing the 100 g butter to room temperature. This will make it easier to mix with the flour and create a smooth dough. Crack the egg and let it sit out as well to reach room temperature, ensuring it incorporates evenly into the dough.
  2. In a large mixing bowl, combine 300 g of flour with the softened butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse breadcrumbs. This technique helps to distribute the fat evenly, which is crucial for a flaky pastry.
  3. Grate 200 g of cheese and add it to the flour and butter mixture. Mix gently with your hands until the cheese is evenly distributed. This will infuse the pastry with a rich, cheesy flavor.
  4. Make a well in the center of the flour mixture and add the room temperature egg. Use a fork to gradually incorporate the flour into the egg, forming a dough. Knead lightly until the dough comes together and is smooth, but be careful not to overwork it as this can make the pastry tough.
  5. Wrap the dough in plastic wrap and chill it in the refrigerator for about 30 minutes. This resting period allows the gluten to relax, making the dough easier to roll out and preventing it from shrinking during baking.
  6. Preheat your oven to 180°C (356°F). Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Cut into desired shapes and place them on a baking sheet lined with parchment paper.
  7. Bake the pastries in the preheated oven until they are golden brown and the cheese is bubbly, approximately 15-20 minutes. The edges should be crisp and the aroma of baked cheese should fill the kitchen.
