Thai Nut Pastry

In Thai homes, the pastry is prepared with a simple blend of flour, nuts, butter, sugar, and an egg, capturing the essence of comfort and tradition. The result is a pastry that is both rich and nutty, offering a taste that is both familiar and cherished in Thai family gatherings.

Ingredients

  • 250 gflour
  • 150 gnuts — chopped
  • 100 gbutter

Method

  1. Begin by allowing the 100 g of butter and 1 egg to come to room temperature. This ensures that the butter is soft enough to blend smoothly with the other ingredients, and the egg will mix more evenly into the dough, resulting in a more cohesive pastry.
  2. In a mixing bowl, combine 250 g of flour and 100 g of sugar. Stir these dry ingredients together with a whisk or fork to ensure they are evenly distributed. This step is crucial for preventing clumps and ensuring a uniform sweetness throughout the pastry.
  3. Add the softened butter to the flour and sugar mixture. Using your fingers or a pastry cutter, blend the butter into the dry ingredients until the mixture resembles coarse crumbs. This texture is key for creating a flaky pastry.
  4. Crack the room temperature egg into the mixture and gently incorporate it using a wooden spoon or your hands. Mix until the dough just comes together. Avoid overworking the dough, as this can make the pastry tough instead of tender.
  5. Roughly chop 150 g of nuts and fold them into the dough. The nuts should be evenly distributed throughout the mixture, providing a crunchy texture in every bite of the pastry.
  6. Once the dough is prepared, shape it into a ball and wrap it in plastic wrap. Chill the dough in the refrigerator for at least 30 minutes. This resting period allows the butter to firm up, making the dough easier to roll out and helping the pastry maintain its shape during baking.
  7. Preheat your oven to 180°C (350°F). Roll out the chilled dough on a lightly floured surface to about 1/4 inch thickness. Cut the dough into desired shapes using a cookie cutter or knife.
  8. Place the shaped dough onto a baking sheet lined with parchment paper. Bake in the preheated oven until the edges of the pastries are golden brown and the tops are lightly colored, indicating they are fully cooked and have a crisp texture.
  9. Remove the pastries from the oven and let them cool on a wire rack. Serve the Thai Nut Pastry warm or at room temperature, allowing the flavors to meld and the texture to be enjoyed at its best.
