Thai Sweet Syrup Cake is a beloved dessert that finds its place at many Thai home tables. This cake is known for its moist texture and the delightful balance of sweetness and richness. Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Start by taking the 100 g of butter out of the refrigerator and let it sit at room temperature until it softens. This will make it easier to cream with the sugar later. At the same time, take the 3 eggs out of the fridge and let them come to room temperature, which helps them blend more smoothly into the batter.
  2. In a large mixing bowl, combine the softened butter and 150 g of sugar. Use a hand mixer or a wooden spoon to cream them together until the mixture is light and fluffy. This process incorporates air, which is crucial for a light cake texture.
  3. Add the room temperature eggs to the creamed butter and sugar, one at a time. Beat well after each addition to ensure the mixture is smooth and homogenous. This gradual addition helps maintain the emulsion and prevents the batter from curdling.
  4. Sift 200 g of flour into the wet ingredients, folding it gently with a spatula. Be careful not to overmix, as this can develop the gluten in the flour and result in a dense cake. Stop folding as soon as no streaks of flour are visible.
  5. Preheat your oven to 180°C (350°F) and grease a cake pan with butter. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven until the cake is golden brown and a toothpick inserted into the center comes out clean, indicating the cake is fully cooked.
  6. While the cake is baking, prepare the syrup to soak. This can be a simple sugar syrup or a flavored one, depending on your preference. The syrup should be warm but not boiling when you use it on the cake.
  7. Once the cake is done baking, remove it from the oven and let it cool slightly in the pan. While it's still warm, poke small holes all over the surface with a skewer or fork. Pour the warm syrup evenly over the cake, allowing it to soak in and infuse the cake with moisture and flavor.
  8. Let the cake cool completely in the pan to allow the syrup to fully absorb. Once cooled, slice and serve the cake at room temperature, allowing the flavors to shine. This cake is best enjoyed with family and friends, embodying the Thai tradition of sharing meals.
