Kachumber

Kachumber is a fresh, tangy salad that brings a burst of flavor to any meal. It's a simple mix of chopped tomatoes, cucumbers, onions, and green chili, all brought together with a generous squeeze of lemon juice and a pinch of fine sea salt. This dish is a staple in Pakistani households, often accompanying rich, hearty dishes to provide a refreshing contrast.

In Pakistan, Kachumber is a common sight on dining tables, especially during family gatherings and festive occasions. Its crisp, vibrant taste complements grilled meats and spicy curries, offering a cooling counterpoint to the heat. The balance of acidity from the lemon and the mild heat from the chili makes it a versatile side, perfect for sharing and enjoying with loved ones.

Ingredients

  • 2tomatoes
  • 2cucumbers
  • 1onion
  • 1green chili
  • 2 tbsplemon juice
  • to tastefine sea salt

Method

  1. Start by washing the vegetables thoroughly under cold running water. This includes 2 tomatoes, 2 cucumbers, 1 onion, and 1 green chili. Dry them with a clean kitchen towel to remove excess moisture, which helps the dressing adhere better.
  2. Dice the tomatoes into small, even pieces, about 1/4 inch in size. This ensures they blend well with the other ingredients and release just enough juice to meld flavors without making the salad watery.
  3. Peel the cucumbers if the skin is thick or waxy, then cut them into similar-sized pieces as the tomatoes. Keeping the size consistent helps in achieving a balanced texture and flavor in each bite.
  4. Peel the onion and slice it finely. The thin slices will provide a mild onion flavor without overpowering the other ingredients. If the onion is too strong, soak the slices in cold water for a few minutes, then drain and pat dry.
  5. Slice the green chili into thin rings. If you prefer less heat, remove the seeds before slicing. The chili adds a subtle kick, enhancing the overall flavor profile of the salad.
  6. In a large mixing bowl, combine the tomatoes, cucumbers, onion, and green chili. Add 2 tablespoons of lemon juice and a generous pinch of fine sea salt to taste. The acid from the lemon juice brightens the flavors, while the salt enhances them.
  7. Toss the salad gently using a large spoon or your hands, ensuring all ingredients are evenly coated with the dressing. Be careful not to mash the vegetables; they should remain crisp and intact.
  8. Transfer the Kachumber to a serving dish and serve immediately. The freshness of the salad complements rich dishes and is a refreshing accompaniment to any meal.
