This home-style version, unfussy and straightforward, reflects the casual charm of German family cooking, where recipes are shared by word of mouth and adjusted by taste rather than strict measurements.

Expect a crisp bite from the radishes, their peppery notes softened by the creamy quark and a touch of cream. Chives add a gentle oniony brightness, while lemon juice lifts the flavors. Each forkful is a balance of creamy, tangy, and peppery elements, seasoned simply with sea salt and black pepper, inviting second helpings without hesitation.

Ingredients

  • 2 bunchesradishes — thinly sliced
  • 150 gquark
  • 2 tbspcream
  • 2 tbspfresh chives
  • 1 tsplemon juice
  • to tastefine sea salt and black pepper

Method

  1. Begin by thoroughly washing 2 bunches of radishes under cold running water to remove any dirt. Trim the tops and roots, then slice the radishes thinly into rounds, about 2-3 mm thick. This ensures they are uniform in size, allowing for even flavor distribution in the salad.
  2. In a medium mixing bowl, combine 150 g of quark and 2 tbsp of cream. Stir them together until the mixture is smooth and creamy. The cream helps to loosen the quark, making it easier to coat the radishes evenly.
  3. Add 1 tsp of lemon juice to the quark mixture. This will add a subtle tanginess that complements the peppery flavor of the radishes. Mix well until the lemon juice is fully incorporated.
  4. Finely chop 2 tbsp of fresh chives and set them aside. These will be added at the end to provide a fresh, onion-like flavor that enhances the overall taste of the salad.
  5. Season the quark mixture with fine sea salt and black pepper to taste. Start with a small pinch of each, then adjust according to your preference. The salt will bring out the natural sweetness of the radishes, while the pepper adds a gentle heat.
  6. Gently fold the sliced radishes into the quark mixture. Use a spatula to ensure the radishes are evenly coated without breaking them. The goal is to keep the radish slices intact for a pleasing texture.
  7. Allow the salad to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the taste of the salad.
  8. Just before serving, sprinkle the chopped chives over the salad and give it a final gentle toss. The chives should be vibrant and fresh, adding a pop of color and flavor. Serve immediately to enjoy the crisp texture of the radishes.
