Baek Kimchi

Serves 4 to 6 vegetarian

Baek Kimchi

Baek Kimchi is a gentle counterpart to its fiery red cousins, offering a milder taste without the usual chili kick. Traditionally, this dish finds its place on the table during family gatherings where its subtle flavor allows for more versatility in pairing with other dishes. It's often prepared during the cooler months, capturing the crispness of the season in its fresh ingredients, and is a staple in Korean households looking for a softer kimchi option.

The taste of Baek Kimchi is a delicate balance of sweet and savory, defined by the crisp texture of napa cabbage and the subtle sweetness of Asian pear. The Korean radish adds a refreshing crunch, while fine sea salt and garlic infuse the dish with a gentle depth of flavor. This kimchi is best enjoyed alongside grilled meats or as a palate-cleansing bite between richer dishes, offering a soothing contrast on the table.

Ingredients

  • 1napa
  • 1Asian pear
  • 1Korean radish
  • 1 tbspfine sea salt
  • 1 tbspgarlic

Method

  1. Begin by preparing the vegetables. Cut the napa cabbage into quarters lengthwise, then slice each quarter into 2-inch pieces. Peel the Asian pear and cut it into thin slices. Peel the Korean radish and julienne it into matchstick-sized pieces. Cutting the vegetables evenly ensures they cook at the same rate and absorb flavors uniformly.
  2. Heat a large pan over medium heat and add a generous amount of oil. Once the oil is shimmering, add the sliced onion. Cook the onion, stirring occasionally, until it becomes soft and translucent. This will take about 5 minutes, and the onion should release a sweet aroma, indicating it's ready for the next step.
  3. Add the napa cabbage, Asian pear slices, and julienned radish to the pan with the softened onion. Stir the vegetables gently to coat them with the oil and onion mixture. Cook the vegetables until they become tender, which will be indicated by the cabbage wilting and the radish becoming slightly translucent. This process should take about 10 minutes.
  4. Once the vegetables are tender, add 1 tablespoon of fine sea salt and 1 tablespoon of minced garlic to the pan. Stir well to combine, ensuring the salt and garlic are evenly distributed throughout the vegetables. The garlic should release a fragrant aroma, and the salt will begin to draw out the natural juices from the vegetables, enhancing their flavor.
  5. Continue cooking for an additional 2-3 minutes, allowing the flavors to meld together. The vegetables should be tender but still have a slight crunch, and the mixture should be moist but not watery. Taste the kimchi and adjust the seasoning if necessary, adding a pinch more salt if desired.
  6. Transfer the Baek Kimchi to a serving dish and serve it warm. The mild, savory flavors make it a perfect accompaniment to a variety of Korean dishes. Enjoy this home-cooked version of Baek Kimchi with family and friends, appreciating the balance of flavors and textures.
