Bhindi Masala

Serves 4 to 6 vegetarian

Bhindi Masala

Bhindi Masala is a staple in Pakistani home kitchens, where it is prepared with a sense of intuition and love. This dish, made with fresh okra, is a frequent player in everyday meals, bringing warmth to weeknight dinners. It is crafted with a touch of spontaneity, as salt is measured by feel and oil is used generously, embodying the casual yet thoughtful approach of home cooking.

The dish greets you with tender okra, sautéed to perfection with onions and a hint of amchur for a tangy lift. Coriander seeds add a subtle citrus note, rounding out the flavors. Bhindi Masala is an invitation to savor the simplicity and richness of a meal made for sharing, where everyone reaches for seconds.

Ingredients

  • 500 gokra
  • 2onions
  • 1 tspamchur
  • 1 tspcoriander
  • 3 tbspoil
  • to tastefine sea salt

Method

  1. Begin by washing 500 g of okra thoroughly under running water. Pat them dry with a clean kitchen towel to remove any excess moisture, as wet okra can become slimy when cooked. Trim the ends and cut the okra into 1-inch pieces, ensuring uniformity for even cooking.
  2. Peel and thinly slice 2 onions. The thin slices will cook faster and more evenly, providing a sweet and soft base for the dish. Set them aside as you prepare to start cooking.
  3. In a large, heavy-bottomed pan, heat 3 tbsp of oil over medium heat. Once the oil is shimmering, add the sliced onions. Stir occasionally and cook until they become soft and translucent, which should take about 5-7 minutes. The onions should not brown but should develop a sweet aroma and a soft texture.
  4. Add the cut okra to the pan with the softened onions. Stir gently to coat the okra with the oil and onions. Cook the mixture, stirring occasionally, until the okra becomes tender and loses its raw edge. The okra should be vibrant green and slightly crisp, indicating it is cooked through.
  5. Sprinkle 1 tsp of amchur and 1 tsp of coriander over the okra and onions. Stir well to combine, ensuring the spices coat the vegetables evenly. The amchur will add a tangy flavor, while the coriander provides a warm, earthy note.
  6. Taste the Bhindi Masala and add fine sea salt to your preference. Stir once more to distribute the salt evenly. Serve the dish warm, ideally with fresh roti or rice, allowing the flavors to shine in a family-style meal.
