Cooked with care, this rice exemplifies the casual precision of home cooking, with salt measured by intuition and a generous hand with fat.

The resulting rice is tender and fragrant, with each grain distinct yet cohesive, carrying a subtle richness from the butter or oil. Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Rinse 400 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky during cooking.
  2. In a medium saucepan, melt 50 g of butter over medium heat. If using oil instead, heat it until it shimmers. Add finely chopped onions, stirring occasionally until they become translucent and soft, releasing their sweet aroma.
  3. Add the rinsed rice to the pan with the softened onions. Stir gently to coat each grain in the butter or oil, allowing the rice to lightly toast for 2-3 minutes. This step enhances the flavor and helps keep the grains separate.
  4. Pour in 600 ml of water and add 1 tsp of fine sea salt. Stir once to combine, then increase the heat to bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid. Let the rice simmer gently, undisturbed, until all the water is absorbed and the rice is tender. This should take about 15-18 minutes, but check by gently fluffing the rice with a fork to see if the grains are soft and separate.
  6. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. This resting period allows the rice to firm up and makes it easier to fluff.
  7. Fluff the rice with a fork to separate the grains, ensuring a light and airy texture. Taste and adjust the salt if necessary, then serve the rice warm as a side dish, perfect for sharing at the table.
