Gyeran Mari

Serves 4 to 6 vegetarian

Gyeran Mari

Gyeran Mari is a Korean rolled omelette, often found in lunchboxes and on dining tables across Korea. It's a simple yet delightful dish, made with eggs, finely chopped carrot, and scallion, seasoned with a touch of sea salt. The ingredients are mixed and cooked into a thin layer, then rolled into a neat log.

This dish is a staple in Korean home cooking, where it's prepared with care and shared among family members. The taste is savory and comforting, with the sweetness of the carrot and the mild onion flavor of the scallion complementing the rich, fluffy eggs. It's a versatile dish that can be enjoyed warm or at room temperature, making it perfect for any meal.

Ingredients

  • 4eggs
  • 1carrot — minced
  • 1scallion
  • 1 tspfine sea salt
  • oilfor rolling

Method

  1. Begin by finely dicing 1 carrot and 1 scallion. Aim for uniform pieces, approximately 1/8 inch in size, to ensure they cook evenly and blend well with the eggs.
  2. Crack 4 eggs into a mixing bowl. Add 1 teaspoon of fine sea salt and beat the eggs thoroughly until the yolks and whites are completely combined and the mixture is a uniform pale yellow.
  3. Heat a non-stick skillet over medium heat and add a small amount of oil, just enough to lightly coat the bottom. Add the diced carrot and scallion to the pan and sauté them until the carrot is tender and the scallion is soft and fragrant, about 2-3 minutes.
  4. Once the vegetables are cooked, reduce the heat to low. Pour the beaten eggs into the skillet, ensuring they cover the vegetables evenly. Let the eggs cook gently until the edges begin to set and the surface is slightly glossy with no visible liquid egg.
  5. Using a spatula, carefully lift one edge of the omelet and begin to roll it over itself, similar to a jelly roll. Continue rolling until you reach the opposite edge of the skillet.
  6. Once rolled, press gently on the roll with the spatula to ensure it holds its shape. Allow it to cook for an additional minute to ensure the inside is fully set and the outside is lightly golden.
  7. Transfer the Gyeran Mari to a cutting board and let it rest for a minute. Slice it into 1-inch pieces and serve warm, allowing the flavors to meld and the texture to be tender yet firm.
