Kartoffelpüree, a staple in German households, embraces the simplicity and comfort of home cooking. It's a dish that transcends specific occasions, finding its place at both weekday dinners and festive holiday tables. This version, familiar across Germany, relies on the unpretentious use of butter and salt, with no hesitation in serving generous portions. It's not about embellishments but about the heart of the meal.

The result is a creamy, velvety mash that carries the essence of its core ingredients. The warm milk and butter create a luscious texture, while a hint of fresh nutmeg adds subtle depth. Ingredients

  • 1 kgstarchy potatoes
  • 150 mlwarm milk
  • 60 gbutter
  • fresh nutmega pinch
  • to tastefine sea salt

Method

  1. Peel 1 kg of starchy potatoes and cut them into evenly sized chunks, about 2-3 cm each. This ensures they cook at the same rate, resulting in a smooth and consistent Kartoffelpüree.
  2. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of fine sea salt to the water. Bring the pot to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender and can be easily pierced with a fork, about 15-20 minutes.
  3. While the potatoes are cooking, warm 150 ml of milk in a small saucepan over low heat. Do not let it boil; just heat until it's warm to the touch. This helps the milk incorporate smoothly into the potatoes later.
  4. Once the potatoes are tender, drain them thoroughly in a colander. Return them to the pot and place the pot back on low heat for a minute or two to evaporate any excess moisture. This step ensures the Kartoffelpüree is not watery.
  5. Add 60 g of butter to the potatoes and begin mashing with a potato masher or ricer. Gradually pour in the warm milk while continuing to mash until the mixture is smooth and creamy. Adjust the consistency by adding more milk if needed.
  6. Season the Kartoffelpüree with a pinch of fresh nutmeg and additional fine sea salt to taste. Stir well to combine, ensuring the spices are evenly distributed throughout the mash.
  7. Serve the Kartoffelpüree warm, alongside your main course. The dish should be creamy and smooth, with a hint of nutmeg and a buttery finish, perfectly complementing any meal.
