Leipziger Allerlei

Leipziger Allerlei hails from the Saxony region, where it has been a staple springtime dish since the 19th century. Traditionally enjoyed as a celebration of the season's fresh vegetables, it reflects the bounty of the local harvest. This version captures the essence of a German family kitchen, focusing on simplicity and natural flavors without unnecessary embellishments.

The dish is a vibrant medley of carrots, asparagus tips, peas, cauliflower florets, and button mushrooms, all gently enveloped in butter and cream. Each ingredient retains its individual taste and texture, creating a harmonious balance that is both comforting and satisfying. Salt is added thoughtfully, enhancing the natural sweetness of the vegetables. A second helping is always encouraged, in true Saxony style.

Ingredients

  • 200 gcarrots — sliced
  • 200 gasparagus tips
  • 150 gpeas
  • 150 gcauliflower florets
  • 100 gbutton mushrooms
  • 40 gbutter
  • 100 mlcream
  • to tastefine sea salt

Method

  1. Begin by preparing the vegetables. Peel and slice the 200 g of carrots into thin, even rounds. Trim the 200 g of asparagus tips, ensuring they are of uniform length. Shell the 150 g of peas if using fresh, or rinse if using frozen. Break the 150 g of cauliflower into small, bite-sized florets. Clean the 100 g of button mushrooms with a damp cloth and slice them evenly.
  2. In a large, heavy-bottomed skillet, melt 40 g of butter over medium heat. Add a finely chopped onion to the pan, stirring occasionally. Cook until the onion becomes translucent and sweet, which will take on a light golden hue and a sweet aroma.
  3. Add the sliced carrots, asparagus tips, peas, cauliflower florets, and mushrooms to the skillet with the softened onions. Stir well to coat the vegetables in the butter. Cook over medium heat, allowing the vegetables to braise gently. Stir occasionally until the vegetables begin to soften and the edges of the carrots and mushrooms take on a slight caramelization.
  4. Pour in 100 ml of cream, stirring to combine with the vegetables. Continue to cook gently, allowing the cream to reduce slightly and thicken. The vegetables should be tender but still retain their shape and a slight bite, with the cream forming a light, glossy coating.
  5. Season the Leipziger Allerlei with fine sea salt to taste, ensuring the flavors are balanced and the natural sweetness of the vegetables is enhanced. Serve the dish warm as a side beside your main course, embodying the comforting and unpretentious nature of Saxon home cooking.
