Banh Canh Cua

Banh Canh Cua, a cherished dish from Vietnam's central coast, captures the essence of home cooking with its rich flavors and communal spirit. Crafted with care, this version reflects the generous use of fat and salt, measured by instinct rather than precision. It's a comforting meal often shared among family, embodying the warmth and hospitality of Vietnamese home kitchens.

This dish envelops you in its savory embrace, with udon-like rice noodles soaking up the luxurious pork broth infused with the subtle sweetness of crab and a hint of annatto oil. The scallions provide a fresh contrast, perfectly balancing the hearty flavors. Each bowl invites you to savor the simplicity and depth of Vietnamese coastal cuisine.

Ingredients

  • 400 gudon-like rice noodles
  • 200 gcrab
  • 1 Lpork broth
  • 1 tbspannatto oil
  • 2scallions
  • to tastefine sea salt

Method

  1. In a large pot, heat 1 tablespoon of annatto oil over medium heat. Once the oil is shimmering, add the white parts of 2 scallions, finely chopped. Stir gently and cook until the scallions are soft and fragrant, about 2 to 3 minutes, ensuring they do not brown.
  2. Add 1 liter of pork broth to the pot, stirring to combine with the scallion mixture. Bring the broth to a gentle simmer over medium heat. This will infuse the broth with the scallion's aroma and the annatto oil's color.
  3. Introduce 200 grams of crab into the simmering broth. Stir gently to distribute the crab evenly. Allow the crab to cook until it turns opaque and firm, which should take about 3 to 4 minutes, indicating it's cooked through.
  4. Add 400 grams of udon-like rice noodles to the pot. Stir occasionally to prevent the noodles from sticking together. Cook until the noodles are tender yet slightly chewy, which is a key texture for this dish.
  5. Taste the broth and adjust the seasoning by adding fine sea salt to taste. Remember, the broth should be savory and rich, complementing the sweetness of the crab.
  6. Finish the dish by adding the green parts of the scallions, finely sliced, for a fresh and vibrant garnish. Serve immediately, ensuring the noodles and crab are evenly distributed in each bowl.
