Boat Noodles

Boat Noodles, or "Kuay Teow Reua," have their roots in the bustling life along Thailand's Khlong canals. Originally served from small boats, this dish was designed to be a quick and hearty meal for traders and travelers. Today, it has found a beloved place in Thai homes, where it's often enjoyed as a comforting lunch or dinner. The recipe here captures the essence of this tradition, reflecting how a Thai family cook brings it to life at their own table.

Expect a rich and aromatic experience with each bite, as tender beef meets a velvety dark spiced broth, all cradled by silky rice noodles. The generous use of fat and a pinch of fine sea salt bring depth and balance, while pork rinds add an irresistible crunch. This dish is meant to be shared, inviting everyone around the table to savor its robust and soulful flavors.

Ingredients

  • 400 grice noodles
  • 1 Ldark spiced broth
  • 150 gbeef
  • pork rindsto top
  • 1 tbspdark soy
  • to tastefine sea salt

Method

  1. Start by preparing the beef. Slice the 150 g of beef thinly against the grain to ensure tenderness. Set aside for later use.
  2. In a large pot, pour in 1 L of dark spiced broth and bring it to a gentle simmer over medium heat. This will be the base of your Boat Noodles, infusing the dish with its signature depth and aroma.
  3. Once the broth is simmering, add the sliced beef to the pot. Stir gently to separate the slices and allow them to cook evenly. The beef is done when it turns a light brown and is tender to the touch, which should take a few minutes.
  4. Add 1 tbsp of dark soy sauce to the broth, stirring to combine. This will deepen the color and enhance the umami flavor of the dish.
  5. Introduce the 400 g of rice noodles to the pot. Stir occasionally to prevent them from sticking together. The noodles are ready when they become soft and pliable, absorbing some of the broth's flavor.
  6. Taste the broth and adjust the seasoning with fine sea salt as needed. The broth should be savory with a balanced depth of flavor, complementing the beef and noodles.
  7. Ladle the noodles and broth into serving bowls, ensuring each portion has a good mix of beef and noodles. Top generously with pork rinds for a crunchy contrast.
  8. Serve the Boat Noodles immediately, allowing everyone to enjoy the rich, aromatic broth and the variety of textures from the noodles, beef, and pork rinds.
