Ingredients

  • 1 kgyellow onions — thinly sliced
  • 4 tbspbutter
  • 1 Lbeef or vegetable stock
  • 1/2 cupdry white wine
  • 4 slicesbaguette
  • 200 gGruyère cheese — grated

Method

  1. Begin by peeling 1 kg of yellow onions. Slice them thinly and evenly, aiming for slices about 3 mm thick. This uniformity ensures that the onions cook evenly and soften at the same pace, which is crucial for the texture of the soup.
  2. In a large, heavy-bottomed pot, melt 4 tablespoons of butter over medium heat. Add the sliced onions to the pot, stirring to coat them in the butter. Reduce the heat to low and cook the onions slowly, stirring occasionally. You want the onions to become deeply caramelized, turning a rich golden brown color, which will take about 30 to 40 minutes. This step develops the sweet and savory base flavor of the soup.
  3. Once the onions are caramelized, increase the heat to medium and pour in 1/2 cup of dry white wine. Stir and scrape up any browned bits from the bottom of the pot, allowing the wine to reduce by half. This deglazing adds depth and a touch of acidity to balance the sweetness of the onions.
  4. Add 1 liter of beef or vegetable stock to the pot. Bring the mixture to a gentle simmer, then reduce the heat to maintain a low simmer. Let the soup cook until the flavors meld and the broth tastes rounded and rich, about 20 to 30 minutes. During this time, the onions should be fully tender and the broth infused with their flavor.
  5. While the soup simmers, prepare the baguette slices. Toast 4 slices of baguette until they are crisp and golden. Grate 200 g of Gruyère cheese and set it aside.
  6. Taste the soup and adjust the seasoning with salt and pepper to your liking. If the soup lacks brightness, a small splash of additional wine or a squeeze of lemon juice can enhance the flavor.
  7. Preheat your oven's broiler. Ladle the hot soup into oven-safe bowls, leaving some space at the top. Place a toasted baguette slice on each bowl of soup, then generously cover with the grated Gruyère cheese.
  8. Place the bowls under the broiler until the cheese is melted, bubbly, and slightly browned. This should take just a few minutes, so watch closely to prevent burning. Serve the soup immediately, enjoying the contrast of the savory broth and the gooey, toasted cheese topping.
