İşkembe Çorbası

İşkembe Çorbası, a cherished staple in Istanbul's night kitchens, is often savored in the early hours, long after the city's hustle has quieted. This version captures the essence of home cooking, where salt is measured by instinct and fat is never spared, creating a dish that's as much about the making as it is the eating.

The soup's robust character comes from its tender tripe and fragrant garlic, simmered until they meld into a comforting warmth. A splash of vinegar and a dash of pul biber lend brightness and a gentle heat, while butter adds a silky finish. Seasoned to taste with fine sea salt and black pepper, each bowl invites you to linger over its rich, savory depths.

Ingredients

  • 600 gcleaned tripe
  • 1 Lwater
  • 4 clovesgarlic
  • 2 tbspvinegar
  • 1 tbspbutter
  • to finishpul biber
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the tripe. Rinse the 600 g of cleaned tripe under cold water to remove any lingering impurities. Cut the tripe into small, bite-sized pieces, about 2-3 cm each, ensuring they are uniform for even cooking. This will help the tripe cook evenly and absorb the flavors of the soup.
  2. In a large pot, add the tripe pieces and pour in 1 L of water. Bring the pot to a boil over high heat. As the water heats, skim off any foam that rises to the surface to ensure a clear broth. Once boiling, reduce the heat to a gentle simmer.
  3. While the tripe simmers, prepare the aromatics. Peel and finely chop 4 cloves of garlic. In a separate small pan, melt 1 tbsp of butter over medium heat. Add the chopped garlic and sauté gently until the garlic is fragrant and just begins to turn golden, being careful not to let it burn, as this would impart a bitter taste.
  4. Add the sautéed garlic and 2 tbsp of vinegar to the pot with the simmering tripe. The vinegar will help tenderize the tripe and add a subtle tang to the soup. Continue to simmer the mixture, allowing the flavors to meld and the tripe to become tender. This should take about 1 to 1.5 hours, or until the tripe is soft and easy to chew.
  5. Once the tripe is tender, taste the soup and season with fine sea salt and black pepper to your preference. Remember, the salt should enhance the flavors without overpowering them. Stir well to ensure the seasoning is evenly distributed throughout the soup.
  6. To finish, sprinkle a generous amount of pul biber over the soup for a touch of heat and color. Serve the İşkembe Çorbası hot, ideally with a side of crusty bread for dipping, and enjoy it as a comforting, hearty meal.
