Jatjuk

Serves 4 to 6 vegan

Jatjuk

Jatjuk, a creamy pine nut porridge, has its roots in Korean home cooking, where it is often enjoyed as a comforting breakfast or a light, nourishing meal. This dish reflects the simplicity and warmth of a family kitchen, where ingredients are measured by intuition and shared at the table. It’s a dish you might find on the table during quiet mornings or as a gentle offering to someone recovering from an illness.

The taste of Jatjuk is subtly nutty, with the richness of pine nuts enveloping each grain of rice. The texture is smooth and velvety, creating a soothing experience with every spoonful. A sprinkle of jujube slices adds a hint of sweetness, balancing the porridge's natural flavors. Serve warm, letting the aromas mingle as you gather around, savoring each comforting bite.

Ingredients

  • 80 gpine nuts
  • 50 grice
  • 600 mlwater
  • 1/2 tspfine sea salt
  • jujube — to garnish

Method

  1. Start by preparing the pine nuts and rice. In a dry skillet over medium heat, toast 80 g of pine nuts until they are golden brown and release a nutty aroma, about 3-4 minutes. Be sure to stir constantly to prevent burning. Once toasted, set aside a small handful for garnish and transfer the rest to a blender.
  2. Rinse 50 g of rice under cold water until the water runs clear. This removes excess starch and prevents the porridge from becoming too thick. Add the rinsed rice to the blender with the toasted pine nuts.
  3. Pour 600 ml of water into the blender with the pine nuts and rice. Blend the mixture until it becomes a smooth, creamy consistency. This step ensures the porridge will have a uniform texture.
  4. Transfer the blended mixture to a medium saucepan. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. This prevents the porridge from sticking to the bottom of the pan.
  5. Once simmering, reduce the heat to low and continue to cook, stirring frequently, until the porridge thickens to a creamy consistency, about 15-20 minutes. The porridge should coat the back of a spoon and have a smooth, velvety texture.
  6. Season the porridge with 1/2 tsp of fine sea salt, stirring well to combine. Taste and adjust the seasoning if necessary, keeping in mind that the flavor should be subtle and nutty.
  7. For garnish, thinly slice a jujube and sprinkle it along with the reserved toasted pine nuts over the porridge. This adds a touch of sweetness and a contrasting texture to the dish.
  8. Serve the Jatjuk warm, ideally in individual bowls, to appreciate its creamy texture and nutty flavor. This dish is perfect for sharing, embodying the warmth and comfort of Korean home cooking.
