Minestra di Orzo e Pasta

Serves 4

Minestra di Orzo e Pasta

Minestra di Orzo e Pasta hails from the mountainous regions where simplicity meets sustenance, often prepared in large pots to stave off the chill of high altitudes. This hearty dish is a staple for those who seek warmth and nourishment, simmering quietly until its flavors deepen and mingle. It's a humble offering, yet it holds a place of respect in any meal, especially during the colder months.

The soup's texture is a comforting blend of tender pearl barley and small pasta, thickened by the softening of vegetables like onion, carrot, and celery. The broth, enriched with olive oil and seasoned with fine sea salt, should taste both earthy and subtly sweet. Each spoonful offers a gentle embrace, a reminder of the care taken in its preparation.

Ingredients

  • 100 gpearl barley
  • 150 gsmall pasta
  • 1onion
  • 1carrot
  • 1celery stalk
  • 1.2 Lwater
  • 2 tbspolive oil
  • to tastefine sea salt

Method

  1. Begin by finely dicing 1 onion, 1 carrot, and 1 celery stalk. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil shimmers, add the diced vegetables. Stir occasionally, cooking until the onion becomes translucent and the carrot and celery have softened, releasing a sweet aroma, about 5-7 minutes.
  2. Add 100 g of pearl barley to the pot, stirring to coat it with the oil and vegetables. Pour in 1.2 liters of water, and bring the mixture to a gentle simmer. Allow it to cook until the barley is tender and the broth has developed a rich, deep flavor, about 30-40 minutes. Taste the broth and season with fine sea salt to your preference.
  3. Once the broth is flavorful, add 150 g of small pasta to the pot. Stir occasionally to prevent sticking. Cook until the pasta is just tender but still has a slight bite, known as 'al dente'. If the soup becomes too thick, add a little more water to reach your desired consistency.
  4. Taste the soup one last time and adjust the seasoning if necessary. Finish by drizzling a bit of olive oil over the top for added richness. Serve the Minestra di Orzo e Pasta in warm bowls, allowing the comforting aroma to envelop you as you enjoy this hearty dish.
