Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. Once the oil shimmers, add 1 finely chopped onion. Stir occasionally, allowing the onion to soften and turn translucent, which should take about 5 to 7 minutes. Be careful not to let the onion brown, as this will affect the flavor of the soup.
  2. Next, add 600 g of beef shank to the pot. Sear the meat on all sides until it develops a rich brown crust. This step is crucial for building depth of flavor in the broth, so ensure each side of the beef shank is well-browned before proceeding.
  3. Peel and slice 2 carrots into rounds and add them to the pot. Stir them with the beef and onions, allowing the carrots to begin softening. This should take about 3 to 4 minutes, and you'll notice the carrots starting to release their sweetness into the mix.
  4. Pour in 1.8 liters of beef broth, ensuring the meat and vegetables are fully submerged. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot with a lid, leaving a small gap for steam to escape, and let it simmer. The soup should cook until the beef is tender and the flavors have melded, which you can judge by the beef easily pulling apart with a fork.
  5. Once the beef is tender, taste the soup and season with fine sea salt and black pepper to your preference. Remember, this is a dish meant for sharing, so adjust the seasoning to suit the communal table. If desired, finish with a drizzle of oil for added richness before serving.
