Ingredients

  • 600 gbeef shank — cubed
  • 1onion
  • 2carrots
  • 1.8 Lbeef broth
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by heating 2 tablespoons of oil in a large pot over medium heat. Once the oil is shimmering, add 1 chopped onion. Stir occasionally and cook until the onion becomes translucent and fragrant, about 5 minutes. Be careful not to let the onion brown, as this will alter the flavor of the soup.
  2. Add 600 g of beef shank to the pot. Sear the beef on all sides until it is browned, which will take about 2-3 minutes per side. This step is crucial for developing a deep, rich flavor in the broth.
  3. Once the beef is browned, add 2 chopped carrots to the pot. Stir them around to coat in the oil and beef juices. Cook for about 2 minutes until the carrots start to soften slightly.
  4. Pour in 1.8 liters of beef broth, ensuring that the beef and vegetables are fully submerged. Increase the heat to high and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and cover the pot with a lid. Allow the soup to simmer gently for about 1.5 to 2 hours. The soup is ready when the beef is tender and can be easily pulled apart with a fork, and the carrots are soft but not mushy.
  6. Taste the soup and season with fine sea salt and black pepper to your liking. Remember, Thai home cooking often relies on tasting and adjusting seasoning as needed.
