Velouté de Champignons

Velouté de Champignons is a cherished staple in the everyday kitchens of central France, where its comforting aroma signals the promise of a satisfying meal. This uncomplicated version reflects the heart of family cooking, where simplicity and warmth are the main ingredients. It's a dish that finds its place on the table during the cooler months, when the earthiness of mushrooms is most welcome.

The velouté is a silken embrace, balancing the gentle sweetness of shallots with the umami depth of mushrooms. Butter and olive oil lend a luxurious texture, while a swirl of heavy cream brings a velvety finish. Garnished with fresh parsley, it's a bowl that speaks of nourishment and home, seasoned with nothing more than fine salt and white pepper.

Ingredients

  • 500 gbutton or cremini mushrooms — sliced
  • 1shallot — finely chopped
  • 2 tbspbutter
  • 1 tbspolive oil
  • 750 mlchicken or vegetable stock
  • 100 mlheavy cream
  • 2 tbspparsley — chopped
  • to tastefine salt and white pepper

Method

  1. Begin by preparing the vegetables and aromatics. Clean 500 g of button or cremini mushrooms with a damp cloth to remove any dirt. Slice the mushrooms evenly to ensure they cook uniformly. Finely chop 1 shallot, aiming for even pieces so they soften at the same rate as the mushrooms.
  2. In a large saucepan, melt 2 tbsp of butter with 1 tbsp of olive oil over medium heat. Once the butter has melted and starts to foam, add the chopped shallot. Cook gently, stirring occasionally, until the shallot becomes translucent and releases a sweet aroma, about 3-4 minutes.
  3. Add the sliced mushrooms to the saucepan. Stir them to coat with the butter and oil mixture. Continue to cook, stirring occasionally, until the mushrooms are softened and have released their moisture. They should take on a light golden hue and the kitchen will be filled with a savory aroma.
  4. Pour in 750 ml of chicken or vegetable stock. Stir to combine and bring the mixture to a gentle simmer. Allow it to simmer until the mushrooms are tender and the broth has a rounded, well-developed flavor, which should take about 15-20 minutes. The liquid should not taste raw but rather rich and mushroom-forward.
  5. Once the mushrooms are tender, remove the saucepan from the heat. Use an immersion blender to puree the soup until smooth, or carefully transfer it to a blender in batches. Return the blended soup to the saucepan if needed.
  6. Stir in 100 ml of heavy cream, mixing until fully incorporated. Taste the soup and adjust the seasoning with fine salt and white pepper to your liking. The soup should taste creamy and balanced, with a gentle peppery finish.
  7. Finely chop 2 tbsp of parsley and stir it into the soup just before serving. Ladle the hot velouté into warmed bowls, ensuring each serving is smooth and velvety. Serve immediately, allowing the aroma to draw everyone to the table.
