Ingredients

  • 6large yellow onions — thinly sliced
  • 40 gbutter
  • 1 Lbeef broth
  • 100 mldry white wine
  • 4 slicesBauernbrot — toasted
  • 80 gBergkäse — grated
  • to tastefine sea salt and black pepper

Method

  1. Peel and slice the 6 large yellow onions into thin rings. In a large, heavy-bottomed pot, melt 40 g of butter over medium heat. Add the sliced onions to the pot, stirring them gently to coat them with the butter. Cook the onions slowly, stirring occasionally, until they become soft and take on a golden-brown color, about 20-30 minutes. The onions should be deeply caramelized but not burnt, which will give the soup its rich, sweet flavor.
  2. Once the onions are caramelized, pour in 100 ml of dry white wine. Increase the heat slightly to bring the wine to a gentle simmer. Use a wooden spoon to scrape up any browned bits from the bottom of the pot, incorporating them into the mixture. Allow the wine to reduce by half, intensifying the flavor and aroma.
  3. Add 1 L of beef broth to the pot, stirring to combine it with the onions and wine. Bring the mixture to a gentle simmer over medium heat. Let the soup simmer for about 15-20 minutes, allowing the flavors to meld together. The broth should be clear and the onions should be tender, almost melting into the soup.
  4. While the soup is simmering, prepare the Bauernbrot. Slice 4 slices of Bauernbrot and toast them until they are crisp and golden. Grate 80 g of Bergkäse and set it aside for later use.
  5. Taste the soup and season it with fine sea salt and black pepper to your liking. Adjust the seasoning gradually, as the flavors will continue to develop as the soup sits.
  6. To serve, ladle the hot soup into oven-safe bowls. Place a slice of toasted Bauernbrot on top of each serving, then generously sprinkle the grated Bergkäse over the bread. Place the bowls under a preheated broiler until the cheese is melted and bubbly, with a golden crust forming on top.
  7. Carefully remove the bowls from the oven and let them cool slightly before serving. The soup should be hot, with the cheese melted and slightly browned, creating a deliciously savory topping.
