Green Curry Paste Mix

Serves 4 to 6 vegan

Green Curry Paste Mix

Green Curry Paste Mix springs from the kitchens of central Thailand, where cooks blend it by instinct rather than measure. This home version captures that essence, crafted as a Thai family cook would prepare it for the table. It's not a recipe for a special occasion but a staple that transforms everyday meals into vibrant experiences.

The paste delivers a bold, aromatic punch, with green chili powder bringing heat and lemongrass powder adding citrusy notes. Galangal and kaffir lend it a fragrant complexity, balanced by a touch of fine sea salt. The mix is crafted to be shared, inviting everyone to savor the layered flavors that define this Thai classic.

Ingredients

  • 2 tbspgreen chili powder
  • 1 tbsplemongrass powder
  • 1 tbspgalangal powder
  • 1 tspkaffir
  • 1 tspfine sea salt

Method

  1. Begin by placing a dry skillet over medium heat. Add 2 tablespoons of green chili powder, 1 tablespoon of lemongrass powder, and 1 tablespoon of galangal powder to the skillet. Toast the spices, stirring constantly with a wooden spoon, until they release a fragrant aroma, which should take about 2 to 3 minutes. Be careful not to let them burn, as this will impart a bitter taste to your paste mix.
  2. Once the spices are toasted and fragrant, remove the skillet from the heat and transfer the spices to a plate to cool completely. This cooling step is crucial as it prevents the residual heat from continuing to cook the spices, which could alter their flavor.
  3. After the spices have cooled completely, grind them using a mortar and pestle or a spice grinder until you achieve a fine, uniform powder. If you don't have these tools, you can also stir them thoroughly in a bowl to ensure even mixing.
  4. Off the heat, mix in 1 teaspoon of kaffir and 1 teaspoon of fine sea salt with the ground spices. Ensure that the salt and kaffir are evenly distributed throughout the mixture, as this will balance the flavors in your curry paste.
  5. Finally, transfer your Green Curry Paste Mix to an airtight container. Store it in a cool, dark place, away from direct sunlight, to preserve its vibrant flavors and colors. Proper storage will ensure your paste mix remains fresh and ready to use for your next Thai cooking adventure.
