Mala Seasoning

Mala Seasoning

Mala Seasoning, a staple in Sichuan kitchens, is crafted with a blend of hand-judged salt and a generous use of fat, embodying the essence of home-cooked warmth. This version captures the familial approach, bringing to life the way Chinese family cooks have lovingly shared it across generations. The preparation is as much about instinct as it is about tradition, with each household adding its own subtle twist.

The seasoning delivers a bold, numbing heat from Sichuan peppercorns and chili flakes, balanced by the fragrant notes of star anise, fennel, and cumin. A hint of sugar rounds out the flavor, creating a complex profile that dances on the palate. This is not just a seasoning; it's an experience meant to be savored and shared, infusing dishes with a signature Sichuan warmth.

Ingredients

  • 2 tbspSichuan peppercorns
  • 2 tbspchili flakes
  • 1 tspstar anise
  • 1 tspfennel
  • 1 tspcumin
  • 1 tspfine sea salt
  • 1 tspsugar

Method

  1. Place a dry skillet over medium heat and add 2 tablespoons of Sichuan peppercorns, 1 teaspoon of star anise, 1 teaspoon of fennel, and 1 teaspoon of cumin. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes intensely fragrant and the peppercorns start to pop slightly.
  2. Remove the skillet from the heat and transfer the toasted spices to a plate to cool completely. This cooling step is crucial to prevent the spices from continuing to cook and potentially burning, which would impart a bitter taste.
  3. Once the spices have cooled, use a spice grinder or mortar and pestle to grind them into a fine powder. If using a mortar and pestle, work in small batches to ensure an even grind. The texture should be fine enough to mix well with the other ingredients but not so fine that it becomes a dust.
  4. In a mixing bowl, combine the ground spice mixture with 2 tablespoons of chili flakes, 1 teaspoon of fine sea salt, and 1 teaspoon of sugar. Stir the mixture thoroughly to ensure the salt and sugar are evenly distributed throughout the spices.
  5. Transfer the Mala Seasoning to an airtight container for storage. Keep it in a cool, dark place to preserve its potency and flavor. This seasoning can be used in various dishes to add a characteristic Sichuan heat and numbing sensation.
