Nihari Masala Blend

Nihari Masala Blend is a staple in Karachi's bustling breakfast scene, where the morning air carries the warmth of spices and the promise of a hearty meal. This blend, perfected in family kitchens, is crafted with an instinctive touch—salt measured by feel, and fat added with a generous hand. It represents the essence of home cooking, passed down through generations, and is always set out to be shared.

The flavor is robust and layered, with the sweet anise of fennel, the warm earthiness of cumin, and the fiery kick of red chili. Nutmeg and ginger powder lend depth, while fine sea salt binds the spices into a harmonious whole. This masala is the aromatic heart of a well-loved breakfast tradition, meant to be savored slowly, spoon by spoon.

Ingredients

  • 2 tbspfennel
  • 1 tbspcumin
  • 1 tbspred chili
  • 1 tspnutmeg
  • 1 tspginger powder
  • 1 tspfine sea salt

Method

  1. Place a dry skillet over medium heat and add 2 tablespoons of fennel seeds and 1 tablespoon of cumin seeds. Toast the seeds, stirring occasionally, until they release a warm, nutty aroma and the fennel seeds take on a light golden hue. This should take a few minutes, but focus on the color and smell rather than time.
  2. Once the seeds are toasted, remove the skillet from the heat and let the spices cool completely. This cooling step is crucial because grinding warm spices can lead to clumping and uneven texture.
  3. Transfer the cooled fennel and cumin seeds to a spice grinder or mortar and pestle. Grind them into a fine powder, ensuring there are no large pieces left. A fine texture will help the masala blend evenly into dishes.
  4. In a mixing bowl, combine the ground spices with 1 tablespoon of red chili powder, 1 teaspoon of nutmeg, 1 teaspoon of ginger powder, and 1 teaspoon of fine sea salt. Stir the mixture thoroughly to ensure all the spices are evenly distributed.
  5. Transfer the Nihari Masala Blend to an airtight container. Store it in a cool, dark place to preserve its potency and flavor. This blend will be ready to add authentic Pakistani flavor to your Nihari dishes.
