Ingredients

  • 3 tbsptamarind powder
  • 2 tbsppalm sugar
  • 1 tbspfish sauce powder
  • 1 tspchili flakes
  • 1 tbspfine sea salt

Method

  1. Place a dry skillet over medium heat. Add 3 tbsp tamarind powder, 2 tbsp palm sugar, 1 tbsp fish sauce powder, 1 tsp chili flakes, and 1 tbsp fine sea salt to the skillet. Stir the mixture continuously with a wooden spoon to ensure even toasting. You will know it's ready when the spices release a fragrant aroma and the palm sugar begins to melt slightly, creating a cohesive blend.
  2. Remove the skillet from the heat and transfer the toasted mixture to a large, shallow plate to cool. Spread it out evenly to speed up the cooling process. This step is crucial to prevent any residual heat from continuing to cook the spices, which could alter their flavors.
  3. Once the mixture is completely cool to the touch, transfer it to a spice grinder or mortar and pestle. Grind the mixture until it reaches a uniform, fine consistency. This ensures that the seasoning will distribute evenly when used in cooking.
  4. Transfer the ground seasoning mix into an airtight container. Ensure the lid is tightly sealed to maintain freshness. Store the container in a cool, dark place, such as a pantry or cupboard, to protect the spices from light and moisture.
