Sajji Masala Blend

Sajji Masala Blend

Sajji Masala Blend hails from the rugged terrains of Balochistan, where it is a staple in the art of communal feasting. This spice mix captures the essence of Baloch cooking — salt is judged by hand, and fat is embraced with generosity, setting the stage for a shared meal that brings people together. In this home version, passed down through generations, the masala is crafted with care, each measure reflecting the intuitive touch of a Pakistani family cook.

The blend delivers a robust and earthy flavor profile, with cumin and coriander leading the charge, while black pepper and red chili provide a subtle kick. Ajwain adds a hint of complexity, rounding out the spice mix with its distinctive aroma. This masala is meant to coat meats lovingly, imbuing them with warmth and depth, ready to be savored in hearty portions around a bustling table.

Ingredients

  • 2 tbspcumin
  • 1 tbspblack pepper
  • 1 tbspcoriander
  • 1 tspajwain
  • 1 tbspfine sea salt
  • 1 tspred chili

Method

  1. Place a dry skillet on medium heat and add 2 tablespoons of cumin seeds, 1 tablespoon of black peppercorns, and 1 tablespoon of coriander seeds. Toast the spices, stirring occasionally, until they release a fragrant aroma and the cumin seeds turn a shade darker, about 3 to 5 minutes. Be attentive to avoid burning, as this will impart a bitter taste.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the spices to a plate to cool completely. This cooling step is important to prevent moisture build-up when grinding, which can affect the texture of the masala.
  3. Once the spices are completely cool, transfer them to a spice grinder or mortar and pestle. Grind them into a fine powder, ensuring there are no large pieces remaining. The texture should be uniform to ensure even distribution of flavors in the final blend.
  4. In a mixing bowl, combine the ground spices with 1 teaspoon of ajwain, 1 tablespoon of fine sea salt, and 1 teaspoon of red chili powder. Stir the mixture thoroughly to ensure all the ingredients are evenly incorporated. The salt should be well mixed to balance the flavors of the spices.
  5. Transfer the Sajji Masala Blend into an airtight container. Store it in a cool, dark place to maintain its potency and flavor. Proper storage will ensure the masala remains fresh and aromatic for future use.
