Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Start by placing a small, dry skillet over medium heat. Add 3 tablespoons of chili flakes and 1 teaspoon of cumin to the skillet. Stir continuously with a wooden spoon to ensure even toasting. You'll know they are ready when the chili flakes darken slightly and a warm, spicy aroma fills the air, which should take about 2-3 minutes.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a large plate or a cool surface to stop the cooking process. Allow them to cool completely. This cooling step is crucial to prevent any residual heat from altering the flavor when you combine the spices.
  3. Once the spices have cooled, combine them with 2 tablespoons of fine sea salt and 1 tablespoon of garlic powder in a mixing bowl. Use a mortar and pestle or a spice grinder to blend the mixture until it reaches a uniform texture. The goal is to have a consistent blend where the salt and spices are evenly distributed.
  4. Transfer the Thai Chili Salt to an airtight container. A glass jar with a tight-fitting lid is ideal. Store the jar in a cool, dark place, such as a pantry or cupboard, to protect the spices from light and moisture, which can degrade their flavor over time.
  5. For optimal aroma and flavor, use the Thai Chili Salt within a few months. This blend is perfect for adding a spicy, savory kick to various Thai dishes or even as a seasoning for grilled meats and vegetables.
