Mate

Mate emerges as a cherished Argentinian tradition, enjoyed both in the morning and the afternoon. This communal drink revolves around a simple yet profound ritual: a shared gourd filled with yerba mate and hot water, sipped through a bombilla. It stands apart from any solitary tea or coffee experience, offering instead a round of camaraderie that unites those gathered.

The taste of mate is an intricate balance of earthiness and subtle bitterness, with an optional hint of sweetness for those who prefer it. The cebador, or server, initiates the round by drinking first and continues to pour for the group, passing the gourd clockwise. Each sip is a moment of connection, a shared pause in the day.

Ingredients

  • 200 gramosyerba mate
  • agua calienteaproximadamente 80°C, según sea necesario
  • azúcaropcional, al gusto

Method

  1. Comience tomando su calabaza y llenándola dos tercios con 200 gramos de yerba mate. Sostenga la calabaza en un ángulo leve para que la yerba forme una pendiente en el interior. Esto ayuda a crear un bolsillo para que el agua se asiente y evita que la yerba se sature en exceso. Agite suavemente la calabaza para permitir que cualquier polvo fino se asiente en la parte superior, que puede ser descartado o dejado como está.
  2. A continuación, vierta una pequeña cantidad de agua fría en el hueco creado por la pendiente. Este humedecimiento inicial permite que la yerba se hinche y la prepara para el agua caliente, asegurando que el sabor no sea demasiado intenso. Inserte la bombilla, la pajilla de metal, en el área hueca, teniendo cuidado de no perturbar la pendiente de la yerba.
  3. Caliente el agua hasta que alcance aproximadamente 80°C, evitando un hervor completo ya que el agua hirviendo puede escaldar la yerba y resultar en un sabor amargo. Vierta lentamente el agua caliente en el área hueca donde se coloca la bombilla. Tenga cuidado de verter el agua suavemente para que no moje todo el montículo de yerba de una vez, preservando la pendiente seca.
  4. Beba el mate a través de la bombilla. La primera vertida suele ser la más fuerte en sabor. Después de beber, rellene la calabaza con más agua caliente para la siguiente persona en la ronda, manteniendo la misma técnica de vertido suave. Recuerde no revolver la yerba con la bombilla, ya que esto puede obstruir la pajilla y alterar el equilibrio del sabor.
  5. Continúe rellenando la calabaza con agua caliente hasta que la yerba se vuelva 'lavada', lo que se indica por una pérdida notable de sabor y color en el líquido. En este punto, puede optar por agregar yerba fresca a la calabaza para comenzar una nueva ronda o concluir la sesión.
