Chipá

Chipá hails from the northeastern regions of Argentina, where it is a beloved companion to the afternoon ritual of sipping mate. This cheese bread, crafted from mandioca starch, is traditionally enjoyed warm by the dozen. Its presence is a staple on tables where friends and family gather, often nestled in a cloth-lined basket beside a steaming thermos of mate, ready to be shared and savored.

The hallmark of chipá is its delightful texture, a combination of pull and squeak that is both satisfying and playful. The rich, cheesy aroma is irresistible, with a tender crumb that gives way to a slightly chewy interior. The balance of salty cheese and the subtle tang of tapioca starch creates a flavor that is comforting and familiar, making each bite a perfect complement to the herbal notes of mate.

Ingredients

  • 300 gramosalmidón de tapioca
  • 150 gramosqueso rallado — mezcla de queso fresco o parmesano
  • 1huevo
  • 50 gramosmanteca, ablandada
  • 60 mililitrosleche
  • 1 cucharaditasal

Method

  1. En un bol grande, combine 300 gramos de almidón de tapioca, 150 gramos de queso rallado, 1 huevo, 50 gramos de manteca ablandada, 60 mililitros de leche y 1 cucharadita de sal. Use sus manos para mezclar estos ingredientes hasta formar una masa suave y cohesiva. La masa debe ser ligeramente pegajosa pero manejable. Deje reposar la masa durante 10 minutos para permitir que el almidón se hidrate y los sabores se integren.
  2. Después de reposar, tome pequeñas porciones de la masa y ruédelas entre sus palmas para formar bolas del tamaño de una nuez. Procure que sean uniformes en tamaño para que se horneen de manera pareja. Si la masa se pega a sus manos, espolvoréelas ligeramente con un poco de almidón de tapioca.
  3. Precaliente el horno a 200°C. Coloque las bolas de masa en una bandeja para hornear forrada con papel pergamino, dejando un poco de espacio entre cada una para permitir la expansión. Hornee en el horno precalentado hasta que los chipá estén inflados y las partes superiores estén salpicadas de manchas doradas, lo cual debería tomar alrededor de 18 minutos. El aroma del queso horneado llenará la cocina.
  4. Una vez horneados, retire los chipá del horno. Se desinflarán ligeramente al enfriarse, lo cual es normal. Disfrútelos mientras aún están calientes para apreciar plenamente su textura masticable y sabor a queso.
  5. Sirva los chipá calientes junto a un mate tradicional. La combinación del pan de queso salado y la bebida herbal es un maridaje clásico en la cultura argentina.
