Bife de Chorizo

Bife de chorizo stands as a cornerstone of Argentinian parrillas and steakhouses, revered for its robust cut that bears no relation to sausage despite its name.   • 2bifes de chorizo, 400 gramos cada uno
  • al gustosal gruesa

Method

  1. Espolvoree generosamente sal gruesa en ambos lados de los 2 bifes de chorizo, asegurando una cobertura uniforme. Esto realzará el sabor y ayudará a crear una deliciosa costra durante la cocción.
  2. Precaliente una parrilla o una sartén de hierro fundido a fuego alto hasta que comience a humear. La sartén o parrilla debe estar muy caliente para sellar adecuadamente los bifes y conservar sus jugos.
  3. Coloque los bifes en la superficie caliente sin amontonarlos. Selle el primer lado durante unos 3 a 4 minutos, hasta que se forme una costra marrón oscura y los bordes comiencen a caramelizarse.
  4. Con unas pinzas, voltee los bifes una vez y continúe cocinando el otro lado. Para un término medio, observe que los jugos comiencen a acumularse en la superficie del bife, y debe sentirse ligeramente elástico al presionarlo.
