Entraña

Entraña, or skirt steak, is a cherished cut in Argentine cuisine, often reserved for the asado, the traditional barbecue that brings families and friends together. It is the butcher’s prize, known for its rich marbling and robust flavor. Entraña is typically grilled hard and fast, ensuring a beautifully charred exterior while the inside remains tender and rosy.

The taste of entraña is a delightful combination of smoky and savory, with the coarse salt enhancing its natural flavors. It is traditionally served with chimichurri on the side, allowing diners to customize each bite with the bright, tangy notes of this iconic Argentinian condiment.

Ingredients

  • 800 gramosentraña, membrana recortada
  • al gustosal gruesa

Method

  1. Espolvoree generosamente sal gruesa en ambos lados de la entraña de 800 gramos, asegurando una cobertura uniforme. Esto realzará el sabor natural de la carne y ayudará a formar una costra durante el asado. Déjela reposar mientras prepara la parrilla.
  2. Prepare su parrilla y caliéntela hasta que esté muy caliente. Desea que las rejillas de la parrilla estén casi humeantes, lo que sellará la carne rápidamente y retendrá los jugos. Una parrilla caliente es esencial para lograr el perfecto chamuscado en el exterior mientras mantiene el interior tierno y jugoso.
  3. Coloque la entraña salada en la parrilla caliente. Cocine durante 4 a 6 minutos de un lado sin moverla, permitiendo que se forme una costra marrón profunda. Voltee la carne con pinzas y ase el otro lado durante otros 4 a 6 minutos hasta que esté bien dorada y ligeramente chamuscada.
  4. Una vez que la entraña esté bien dorada por ambos lados, retírela de la parrilla y déjela reposar en una tabla de cortar durante 5 minutos. Este período de reposo permite que los jugos se redistribuyan dentro de la carne, asegurando que cada bocado sea jugoso y sabroso.
  5. Después de reposar, corte la entraña a través del grano en tiras. Cortar contra el grano acorta las fibras musculares, haciendo que la carne sea más tierna y fácil de masticar.
  6. Sirva la entraña en rodajas inmediatamente. Este corte de carne se disfruta mejor caliente, ya que tiende a enfriarse y endurecerse rápidamente.
