Mole negro

The darkest of the great moles: chile, chocolate, and a day's work reduced to a sauce that tastes like a celebration.

The journey

Mole is not one sauce. It is a family. Mole negro is the night-colored Oaxacan child — dried chiles toasted almost to bitterness, cacao, sesame, almonds or peanuts, plantain or bread, and a spice drawer that can include clove, cinnamon, and anise. Convents and home kitchens both claim versions. What they share is labor. You do not make mole negro because you are in a hurry.

The word mole comes from Nahuatl molli, a sauce. Spanish kitchens added nuts, spices, and sugar. The result is neither 'Aztec chocolate gravy' nor a Spanish import. It is a Mexican invention that kept both inheritances. In our Mexican volume mole negro appears as a named mix — the paste a cook might keep when the full ceremony has already been done once.

In the kitchen

Dilute the paste slowly with stock. Taste for salt, a little sugar or chocolate, and the line between burnt and deep. Turkey and chicken are the classic guests. Rice and warm tortillas are not optional.

If you buy a prepared paste, choose one that lists chiles first, not 'flavoring.' Then give it the time a grandmother would.

Healers and the table

Cacao was a ritual drink long before it was candy. Chile was food and medicine on the same hearth. Mole negro keeps both on the plate without pretending to be a clinic.

Serve it for a feast. That is its traditional use.
