Bihari Boti

Serves 4 to 6 meat

Bihari Boti

Bihari Boti finds its origins in the bustling kitchens of Karachi, where Bihari families have perfected the art of marinating and grilling beef to tender perfection. The dish, deeply rooted in the culinary traditions of the Bihari community, is a staple at family gatherings and special occasions, where the aroma of sizzling meat fills the air and invites communal feasting. This home version captures the essence of how a Pakistani family cook brings it to the table, with each ingredient meticulously balanced by instinct.

Expect each bite of Bihari Boti to offer a succulent experience, with beef strips marinated to tenderness in a rich blend of yogurt and papaya paste. The bihari masala lends its distinctive warmth, while mustard oil adds a subtle sharpness that cuts through the richness. Salt is sprinkled with the wisdom of experience, enhancing the flavors without overpowering them. This dish is a celebration of robust flavors and the generous spirit of sharing at the heart of every Bihari meal.

Ingredients

  • 700 gbeef strips
  • 150 gyogurt
  • 1 tbsppapaya paste
  • 2 tbspbihari masala
  • 1 tbspmustard oil
  • to tastefine sea salt

Method

  1. Begin by marinating the beef strips. In a large mixing bowl, combine 700 g beef strips with 150 g yogurt, 1 tbsp papaya paste, and 2 tbsp bihari masala. Mix thoroughly to ensure each piece of meat is well-coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours to tenderize the meat and infuse it with flavor.
  2. Once the beef has marinated, prepare to cook by heating 1 tbsp mustard oil in a large, heavy-bottomed frying pan over medium-high heat. Allow the oil to become hot but not smoking; this will help sear the meat and lock in the juices.
  3. Add the marinated beef strips to the hot oil in a single layer to avoid overcrowding the pan, which can cause steaming instead of searing. Fry the beef for about 5-7 minutes, stirring occasionally, until the outside is browned and slightly crispy. The yogurt will help caramelize the meat, giving it a rich color and deep flavor.
  4. Check the doneness of the beef by slicing into one of the thicker pieces; it should be cooked through with no pink remaining, and the texture should be tender yet firm. If necessary, continue cooking for a few more minutes, stirring to ensure even cooking.
  5. Once the beef is cooked, taste and adjust the seasoning with fine sea salt to your preference. Remember, the salt should enhance the spices without overpowering them.
  6. Serve the Bihari Boti immediately, garnished with fresh herbs if desired, and enjoy it as part of a shared meal, just as it would be served in a Karachi Bihari kitchen.
