This dish unfolds in layers of flavor, with tender beef nestled in the creamy embrace of shiro powder, enhanced by the aromatic depth of niter kibbeh and the sweet earthiness of onion. Each bite is a warm, inviting blend, perfect for savoring in simple, generous portions that echo the heart of Ethiopian hospitality.

Ingredients

  • 1 cupshiro powder
  • 200 g (7 oz)beef — small cubes
  • 1onion — chopped
  • 2 tbspniter kibbeh

Method

  1. Begin by finely chopping 1 onion. This will ensure it cooks evenly and integrates smoothly into the dish. Cut the 200 g (7 oz) beef into small, bite-sized pieces, about 1/2 inch each, to ensure they cook quickly and absorb the flavors well.
  2. In a medium-sized saucepan, melt 2 tablespoons of niter kibbeh over medium heat. Once melted, add the chopped onion. Stir frequently until the onion becomes translucent and soft, releasing a sweet aroma, which should take about 3 to 5 minutes.
  3. Add the beef pieces to the pan with the onions. Stir to coat the beef with the niter kibbeh and onions. Cook until the beef is browned on all sides, ensuring that it starts to release its juices and the edges become slightly caramelized.
  4. Lower the heat slightly and sprinkle in 1 cup of shiro powder over the beef and onions. Stir continuously to combine, allowing the shiro powder to absorb the juices from the beef and onions, forming a thick, smooth paste.
  5. Gradually add water, about 1/4 cup at a time, stirring constantly to maintain a smooth consistency. Continue adding water until the mixture reaches a creamy, porridge-like texture, thick enough to coat the back of a spoon without dripping.
  6. Simmer the mixture gently, stirring occasionally, until the flavors meld together and the shiro becomes rich and fragrant. The final texture should be creamy and smooth, with the beef tender and well-infused with the spices.
  7. Serve the Bozena Shiro Starter warm or at room temperature. The dish should have a rich, inviting aroma, with a balanced flavor of spices and tender beef pieces throughout.
