It reflects the no-nonsense approach of Franconian cooks, who use butter or clarified butter with ease and rely on instinct rather than measurement for seasoning.

The salad is a satisfying mix of sliced cold Bratwurst and onions, dressed with a tangy blend of white wine vinegar, oil, and mustard. The flavors are bold yet balanced, with the vinegar's acidity cutting through the richness of the sausage. A sprinkle of fine sea salt and freshly ground black pepper enhances the dish, inviting a second helping without hesitation.

Ingredients

  • 4cold Bratwurst — sliced
  • 2onions — thinly sliced
  • 3 tbspwhite wine vinegar
  • 3 tbspoil
  • 1 tspmustard
  • to tastefine sea salt and black pepper

Method

  1. Begin by slicing the 4 cold Bratwurst into thin, even rounds, about 0.5 cm thick. This ensures they cook evenly and absorb flavors well. Peel and thinly slice the 2 onions into half-moons, which will soften and sweeten as they cook.
  2. In a large skillet, heat 3 tablespoons of oil over medium heat. Once the oil is shimmering, add the sliced onions. Cook, stirring occasionally, until the onions become translucent and start to caramelize, releasing a sweet aroma and turning a light golden color.
  3. Add the sliced Bratwurst to the skillet with the onions. Continue to cook, stirring frequently, until the Bratwurst slices are browned on the edges and heated through. The sausages should be slightly crisp on the outside while remaining juicy inside.
  4. In a small bowl, whisk together 3 tablespoons of white wine vinegar, 1 teaspoon of mustard, and a pinch of fine sea salt and black pepper to taste. This dressing will provide a tangy contrast to the rich flavors of the Bratwurst and onions.
  5. Pour the vinegar-mustard dressing over the warm Bratwurst and onions in the skillet. Stir well to ensure everything is evenly coated, allowing the flavors to meld together. Taste and adjust the seasoning with more salt and pepper if necessary.
