Ingredients

  • 8 slicesrustic bread — toasted
  • 600 gripe tomatoes — diced
  • 3 clovesgarlic — rubbed on bread
  • 4 tbspextra virgin olive oil
  • 1 handfulbasil leaves — torn
  • 1 tbspred wine vinegar
  • to tastecoarse sea salt

Method

  1. Begin by preparing the bread. Take 8 slices of rustic bread and grill them over a charcoal grill until they are crisp at the edges but still retain a chewy texture within. If a charcoal grill is unavailable, you can toast them in a preheated oven at 200°C (390°F) until the edges are golden brown.
  2. Once the bread is ready and still hot, take 3 cloves of garlic and cut them in half. Rub the cut side of the garlic cloves over the surface of each slice of bread. This will infuse the bread with a subtle garlic aroma.
  3. After rubbing the garlic, brush each slice generously with extra virgin olive oil. Use about 2 tablespoons of the 4 tablespoons of olive oil for this step. The oil should soak slightly into the bread, enhancing its flavor and texture.
  4. Next, prepare the tomato topping. Dice 600 g of ripe tomatoes into small, even pieces and place them in a mixing bowl. Add a handful of torn basil leaves to the bowl for a fresh, aromatic touch.
  5. Season the tomatoes and basil with coarse sea salt to taste. Drizzle the remaining 2 tablespoons of extra virgin olive oil over the mixture, along with 1 tablespoon of red wine vinegar. Toss everything gently to combine, ensuring the tomatoes are well-coated with the oil and vinegar.
  6. Just before serving, pile the tomato mixture onto the prepared slices of bread. Be generous with the topping, allowing the vibrant colors and fresh flavors to shine. Serve immediately to ensure the bread remains crisp under the juicy tomatoes.
