The dish presents a harmonious blend of textures and tastes, where the lush sweetness of fresh figs contrasts with the creamy, mild cheese. Ingredients

  • 8fresh figs
  • 120 gfresh cheese or ricotta
  • 40 galmonds
  • 2 tbsphoney
  • 1 tbspextra virgin olive oil
  • pinchfine sea salt

Method

  1. Start by washing 8 fresh figs under cool running water. Pat them dry with a clean kitchen towel. Slice each fig in half lengthwise, revealing the beautiful interior. Set the figs aside on a plate.
  2. Take 40 g of almonds and place them in a small skillet over medium heat. Toast the almonds, stirring occasionally, until they become golden brown and release a nutty aroma. This should take about 5 minutes. Remove the almonds from the skillet and let them cool slightly before roughly chopping them.
  3. In a small bowl, combine 120 g of fresh cheese or ricotta with a pinch of fine sea salt. Mix gently to incorporate the salt evenly throughout the cheese. This will enhance the cheese's natural flavor.
  4. In a separate small pan, heat 1 tbsp of extra virgin olive oil over medium heat. Once the oil is warm, add the halved figs cut-side down. Cook for about 2-3 minutes until the figs are slightly caramelized and their juices start to seep out, creating a fragrant aroma.
  5. Remove the figs from the pan and arrange them on a serving platter, cut-side up. Spoon the salted fresh cheese mixture over each fig half, allowing it to nestle into the fruit's center.
  6. Drizzle 2 tbsp of honey over the figs and cheese, ensuring each piece gets a touch of sweetness. Scatter the chopped toasted almonds over the top, adding a crunchy texture to the dish.
  7. Finish with a final drizzle of extra virgin olive oil over the entire platter. Serve immediately, allowing the warmth of the figs to contrast with the cool, creamy cheese and the crunch of the almonds.
