Ganjang Gejang

Serves 4 to 6 seafood

Ganjang Gejang

Ganjang Gejang, a celebrated dish from Korea's coastal regions, is traditionally prepared and enjoyed in soy-crab houses. This home version captures the essence of those establishments, where the balance of salt is judged by hand and crab fat is used generously. Often reserved for special occasions, the dish is a reminder of Korea's rich maritime bounty, bringing the ocean's depth to the dining table.

The taste of Ganjang Gejang is a vibrant interplay of sweet, salty, and spicy, with the natural sweetness of raw crab enhanced by a soy brine infused with garlic and chilies. The texture is both tender and succulent, offering an unforgettable experience that invites diners to savor every bite slowly, appreciating the meticulous flavors that define this Korean delicacy.

Ingredients

  • 4raw crabs
  • 200 mlsoy brine
  • 4garlic cloves
  • 2chilies
  • 1 tspsugar
  • to tastefine sea salt

Method

  1. Begin by cleaning the 4 raw crabs thoroughly under cold running water to remove any sand or debris. Use a brush if necessary to scrub the shells. Once cleaned, carefully separate the top shell from the body and remove the gills and innards, leaving the crab meat intact. Set aside the cleaned crabs in a large bowl.
  2. Prepare the marinade by finely mincing 4 garlic cloves and slicing 2 chilies into thin rounds. In a medium saucepan, combine 200 ml soy brine, the minced garlic, sliced chilies, and 1 teaspoon of sugar. Stir the mixture over low heat until the sugar dissolves completely, ensuring the flavors meld together without boiling.
  3. Allow the marinade to cool to room temperature. This step is crucial as adding hot marinade to the crabs can alter their texture. Once cooled, pour the marinade over the crabs in the bowl, ensuring they are fully submerged. Use a weight or a small plate to keep the crabs submerged if necessary.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 24 hours, allowing the crabs to absorb the flavors of the marinade. During this time, the crab meat will firm up and take on a glossy appearance, indicating it is ready to eat.
  5. Before serving, taste the marinade and adjust the seasoning with fine sea salt if needed. The flavor should be balanced, with a hint of sweetness and a kick from the chilies. Serve the Ganjang Gejang cold, garnished with additional sliced chilies if desired, and enjoy with steamed rice and side dishes for a complete meal.
