Genfo, a staple of the Ethiopian highlands, is a dish that finds its place in daily life rather than on ceremonial tables. Its roots run deep in the everyday culinary practices of the region, where the aroma of barley and spices calls families to gather for a morning meal. This home-cooked version is cherished for its simplicity and authenticity, reflecting the direct and generous flavors that a family cook lovingly imparts.

The texture of Genfo is both smooth and hearty, a comforting blend of barley flour thickened to a satisfying porridge. The niter kibbeh infuses it with a warm, buttery richness, while a hint of berbere provides a gentle spice that lingers on the palate. It's a dish that invites you to savor each bite, a true reflection of its highland origins.

Ingredients

  • 1 cupbarley flour
  • 2 cupswater
  • 2 tbspniter kibbeh
  • 1 tspberbere

Method

  1. Begin by measuring out 1 cup of barley flour and 2 cups of water. Set these aside separately. The barley flour will form the base of the Genfo, while the water will be used to create a smooth, thick porridge-like consistency.
  2. In a medium saucepan, bring the 2 cups of water to a gentle boil over medium-high heat. Once the water is boiling, reduce the heat to medium-low to maintain a gentle simmer. This will ensure the flour incorporates smoothly without forming lumps.
  3. Gradually add the 1 cup of barley flour to the simmering water, stirring continuously with a wooden spoon or whisk. It's important to add the flour slowly and stir constantly to prevent clumping. Continue stirring until the mixture becomes thick and smooth, resembling a soft dough.
  4. Once the mixture reaches a thick, dough-like consistency, remove the pan from heat. Add 2 tablespoons of niter kibbeh to the mixture. Stir well until the niter kibbeh is fully melted and evenly distributed, imparting a rich, buttery flavor to the Genfo.
  5. Sprinkle 1 teaspoon of berbere over the Genfo and gently fold it in. The berbere will add a warm, spicy aroma and a reddish hue to the dish, enhancing its flavor profile.
  6. Transfer the Genfo to a serving bowl, shaping it into a mound with a slight indentation in the center. This traditional presentation allows the flavors to meld beautifully.
  7. Serve the Genfo warm or at room temperature. The texture should be smooth and slightly firm, with the niter kibbeh and berbere creating a fragrant, inviting aroma.
