Ingredients

Method

  1. Place 4 pieces of injera on a clean work surface. Injera is a soft, spongy flatbread with a slightly sour taste, essential to Ethiopian cuisine. Ensure the injera is fresh and pliable, as this will make it easier to work with and enhance the final texture of the dish.
  2. In a small saucepan, melt 2 tablespoons of niter kibbeh over low heat. Niter kibbeh is a spiced clarified butter that infuses the dish with rich, aromatic flavors. Stir occasionally until fully melted and fragrant, ensuring the spices in the butter are well distributed.
  3. Once the niter kibbeh is melted, add 1 tablespoon of berbere to the saucepan. Berbere is a vibrant, spicy blend of chili peppers, garlic, ginger, basil, and other spices. Stir the mixture continuously until the berbere is fully incorporated and the mixture becomes a deep, reddish-brown paste, releasing a warm, spicy aroma.
  4. Using a brush or spoon, evenly spread the spiced niter kibbeh mixture over each piece of injera. Ensure that the mixture covers the entire surface of the injera, as this will provide consistent flavor throughout each bite.
  5. Fold each injera in half, then in half again, creating a neat, triangular shape. This folding technique helps to trap the flavors inside and makes the injera easier to handle and eat.
  6. Place the folded injera pieces onto a dry skillet over medium heat. Allow them to warm gently for about 1-2 minutes per side, just until they become slightly crisp on the edges and the aroma intensifies. The goal is to warm the injera without making it too crispy or dry.
  7. Transfer the warm Kategna Spiced Injera to a serving plate. They can be served immediately while warm, or allowed to cool slightly to room temperature, maintaining their soft yet slightly crisp texture.
