Method

  1. Start by washing the 3 zucchini thoroughly under cold water. Trim the ends and grate them using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters are crispy and not soggy.
  2. In a large mixing bowl, crack 2 eggs and beat them lightly with a fork until the yolks and whites are combined. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Season the mixture with fine sea salt and black pepper to taste, and mix until everything is well incorporated and the zucchini is evenly coated.
  3. Choose a large, heavy-bottomed skillet and pour enough frying oil to cover the bottom with a thin layer. Heat the skillet over medium-high heat until the oil shimmers, indicating it is hot enough for frying. This ensures the fritters will start to crisp up immediately upon contact with the oil.
  4. Using a spoon, scoop a portion of the zucchini mixture and gently place it into the hot oil, flattening it slightly with the back of the spoon to form a round fritter.
