Ingredients

Method

  1. Begin by washing and drying 400 g of vegetables thoroughly. Cut them into bite-sized pieces, ensuring they are uniform in size for even cooking. This step is crucial as it allows the vegetables to cook evenly and achieve the desired texture.
  2. In a large mixing bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Toss the vegetable pieces in the flour mixture until they are well-coated. This coating will help create a crispy exterior when fried.
  3. Heat a generous amount of frying oil in a deep pan or wok over medium-high heat. The oil should be deep enough to submerge the vegetable pieces halfway. Test the oil's readiness by dropping a small piece of coated vegetable into it; if it sizzles and rises to the surface, the oil is ready.
  4. Carefully add the coated vegetables to the hot oil in batches, ensuring not to overcrowd the pan. Fry each batch until the vegetables turn golden brown and crispy on the outside, which should take about 3 to 4 minutes per batch. Use a slotted spoon to transfer the fried vegetables to a paper towel-lined plate to drain excess oil.
  5. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice over the top to add a bright, tangy flavor that complements the crispy texture. Sprinkle with additional fine sea salt and black pepper to taste, adjusting the seasoning to your preference.
