  • 1 cuphummus
  • 1 cuptzatziki
  • 4whole-wheat pitas
  • 2carrots
  • 1cucumber
  • 1bell pepper
  • cherry tomatoes — to serve
  • 3 tbspextra virgin olive oil
  • pinchfine sea salt

Method

  1. Start by preparing the crudités. Peel the 2 carrots and cut them into sticks about 3 inches long. Slice the cucumber into rounds or sticks, depending on your preference. Core and slice the bell pepper into strips. Arrange the carrot sticks, cucumber, and bell pepper strips on a large serving platter, leaving space for the other components.
  2. Next, warm the whole-wheat pitas. Preheat a dry skillet over medium heat. Once hot, place one pita in the skillet and heat for about 1 minute on each side until they are soft and slightly puffed. Repeat with the remaining pitas and stack them on a plate, covering with a clean kitchen towel to keep them warm.
  3. Now, prepare the serving of hummus and tzatziki. Spoon 1 cup of hummus into a small bowl and drizzle 1 tablespoon of extra virgin olive oil over the top. In another bowl, place 1 cup of tzatziki. Arrange these bowls on the platter alongside the crudités.
  4. For the cherry tomatoes, rinse them under cool water and pat dry. Leave them whole or slice in half if they are particularly large. Scatter them around the platter for a burst of color and freshness.
  5. Finally, drizzle the remaining 2 tablespoons of extra virgin olive oil over the crudités and sprinkle a pinch of fine sea salt over the vegetables to enhance their natural flavors. Serve the mezze plate immediately, encouraging everyone to dip the warm pita into the hummus and tzatziki, and enjoy the fresh, vibrant tastes.
