Pakoras

Pakoras

Pakoras are the cherished companions of monsoon evenings in Pakistan, a time when the rain drums a gentle rhythm on rooftops and the aroma of frying delights fills the air. Traditionally enjoyed during the rainy season, these crispy fritters are a staple at teatime, inviting warmth and comfort into homes as the skies open up. This recipe captures the essence of home-cooked pakoras, with ingredients measured by instinct and heart.

A perfect pakora offers a satisfying crunch, followed by the soft, spiced interior of besan-coated onions and potatoes. The hint of ajwain adds a subtle, aromatic depth, while the salt, judged by hand, enhances each bite. Generous use of oil ensures the pakoras are golden and crisp, ready to be shared and savored at the family table.

Ingredients

  • 200 gbesan
  • 2onions
  • 1potato
  • 1 tspajwain
  • as neededoil — for frying
  • to tastefine sea salt

Method

  1. Start by preparing all your ingredients. Peel and thinly slice the 2 onions and 1 potato. Aim for uniform slices to ensure even cooking. Place the sliced vegetables in a large mixing bowl.
  2. Add 200 g of besan (gram flour) to the bowl with the sliced vegetables. Sprinkle in 1 tsp of ajwain seeds. Mix everything together gently with your hands until the vegetables are well coated with the flour and spices.
  3. Gradually add water to the mixture, a little at a time, and continue mixing until you have a thick batter that clings to the vegetables. The consistency should be thick enough to hold the vegetables together but not too runny. Season the mixture with fine sea salt to taste, ensuring it's distributed evenly.
  4. Heat enough oil in a deep frying pan or wok over medium-high heat. The oil should be deep enough to submerge the pakoras halfway. To test if the oil is ready, drop a small bit of batter into the oil; it should sizzle and rise to the surface quickly.
  5. Once the oil is hot, carefully drop spoonfuls of the batter-coated vegetables into the oil. Do not overcrowd the pan, as this will lower the oil temperature and result in greasy pakoras. Fry them in batches if necessary.
  6. Fry the pakoras, turning occasionally, until they are golden brown and crispy on all sides. This should take about 4-5 minutes per batch. The pakoras are done when they have a deep golden color and a crisp texture.
  7. Remove the pakoras from the oil using a slotted spoon and drain them on a plate lined with paper towels to remove excess oil. Sprinkle a little more fine sea salt over the hot pakoras if desired. Serve immediately while they are still hot and crispy, perfect for sharing.
